Does anyone know what tool in Photo Shop I could use to get rid of the double chin? _________________

i'm not sure there is one that will make that job easy, barbara; maybe the clone tool, but it's hard to get it just right.
if you have her lean forward a bit and look up, then stand on a low stool or something so the camera's a little higher in relation to her face than it is here, you should be able to minimize it that way.
another thing that would help a bit (in addition to the posing and camera angle) is to put a reflector below her (it doesn't have to be anything elaborate; you could cover the top of a coffee table with plain white typing paper or aluminum foil and have her sit in front of it). in this shot, all the light is coming from at or slightly above the level of her face; if you bounce some light under her chin, it'll lighten (or cancel out) the shadows being cast under her chin by the main light.
